My Top Two Super Bowl Appetizers

Super Bowl AppetizersI am a football loving type of girl. (If you follow me on Instagram, you’ve already figured out that) Some women don’t get that at all, and some women high five me for it. But football is just a part of life for the Miles.  In fact, last year I counted them up, and I attended at least 32 football games in the fall, between my son’s JV football games, my daughters’ Varsity football games as a cheerleader, my UNC Charlotte 49ers football games, and a few Carolina Panthers games. Yep, just call me a football junkie.

But you know what? It’s become one of the favorite things for my husband and I to do with our kids – other than vacation, of course. Our little ones aren’t so little anymore – now ages 15, 18 and 21 – but no matter how old they get, it’s a fun activity we can all enjoy together – whether in the den, or at the stadium. So personally, I’m thankful for football in a way most people aren’t. For me, football means family togetherness. And I love me some family time. Smiles.

This weekend, we’ve got a chance for more some family togetherness to watch the Super Bowl and I plan on coming through with some of their favorite snacks, of course. That’s what us professional football watching moms and wives do, right?!

So I thought I’d share my top two go-to appetizers that my family always requests, in case you want to try something new for yours. And I’d love to hear what you are fixing this weekend as you watch the Super Bowl – assuming you’re a football junkie like me, of course. If you’re not, you can still make some goodies, and enjoy the commercials. 🙂

TRACIE’S FAMOUS BUFFALO CHICKEN PIZZA APPETIZER
(yes it’s famous, according to my kids and their friends)

Ingredients:

1 to 1 1/2 pounds of chicken breasts
1 Pillsbury Pizza Crust Dough Tube
1 Bottle of Texas Pete Wild Wings Buffalo Sauce
1 Bag of Shredded Mozzarella Cheese
1/2 tsp Chili Powder
1/2 tsp Garlic Salt
1/2 tsp Black Pepper
1-2 tsps of Oregano
1 Can of Pam Cooking Spray

Directions:

Spray your frying pan with Pam (or use Wesson oil if preferred) and cook the chicken breast on both sides until cooked through. Remove from pan, and cut into small pieces, or shred if preferred. Put the shredded/cubed chicken back in the pan, and pour approximately 1/2 the bottle of Buffalo sauce over the chicken pieces. Add in the Chili powder, garlic salt and pepper. Stir and let simmer for about fifteen minutes on low.

While the chicken is simmering, preheat the oven to to the recommended temperature on the crust tube directions. Open your can of dough and carefully stretch it out to fit a large cookie pan (if you use a smaller pan, the crust will just be a little thicker). Lightly spray the pan, then fold the dough into the pan, making sure it touches all four sides of the pan evenly. Try to avoid holes in the dough and keep the dough at an even thickness throughout.  Cook the dough just until it looks a little brown on the top, about five minutes, then remove. Do not fully cook it. Allow to cool for five minutes.

Pour 1/2 of the remaining buffalo sauce onto the dough and spread it out evenly with a basting brush for a light layer across the dough (careful not to puddle). Spread the chicken evenly across the dough, all the way out to each edge and all four corners. Lightly sprinkle the whole pizza evenly with Oregano. Cover the pizza with the Mozzarella cheese. 1 bag is plenty, but 1 1/2 to 2 bags make it extra cheesy. Put it back in the oven another 10-12 minutes until the dough is browned. Let cool for about 10 minutes, then cut into small bite sized, or portion sized squares and enjoy.

 SAUSAGE CHEESE DIP APPETIZER & TOSTITOS

Ingredients:

1 Pound (16 oz) Package of Velveeta Cheese Spread
1 10 0z can of Rotel Diced Tomatoes and Green Chilis
1 Pound of Sausage (hot, sage or regular)
1 Large Jar of Salsa (mild, hot or medium)
Tostitos Chips

Directions:

Brown the sausage in a frying pan until crumbly. Cut the cheese log up into small squares and put on top of the sausage. Pour in Salsa and Rotel tomatoes. Continue stirring on medium heat until it’s a thick, creamy mixture. Transfer to a crock pot, if desired, on a low setting to keep it warm throughout the game.

        Go Seahawks from Oregon! A delicious dip recipe from our son, via Alaska is jalapeño Dip.
        1cup no mayo + 1cup sour cream + 1package cream cheese ( mix well)
        1/2 jalapeño pepper finely chopped (from a jar or can)
        1 tablespoon of the pepper juice
        2cups grated cheddar cheese
        Stir all and enjoy!

        (If you want it milder, use less pepper and juice) Mix together and serve with tortilla chips or crackers

    Hi Tracie, I love football as well. I am a Tennessee Vols Fan.. Your recipes for the Super Bowl sound amazing. Thank you for sharing.

    Mexican Dip

    2 pound box Velveeta Cheese
    1 pound ground chuck
    1 medium chopped onion
    1 can Old El Paso green chopped chilies
    1 can hot or mild Old El Paso Enchilada Sauce
    2 or 3 Tablespoons Worcestershire Sauce
    1 teaspoon chili powder
    Brown ground chuck with onion;drain and put it in a crock pot and add the rest of the ingredients,stir well. Cover and cook on high 1 hour stirring until cheese is fully melted.Serve immediately or turn it down on low up to 6 hours later.

    GO Seahawks!!!!

    Updated and corrected Jalapeño Cheese Dip Recipe
    1cup mayo (I added 1cup sour cream)
    1/4 cup diced jalapeño from a jar or can
    2Tbsp. Jalapeño juice
    1/4 tsp liquid smoke (adds a good flavor)
    1tsp. Garlic powder and 1/4 tsp cayenne pepper (makes it hotter)
    3cups grated cheddar cheese
    Mix all together and serve with tortilla chips
